
April -June is peak season for local, farm fresh strawberries in Georgia. I love to go to our local strawberry patch and pick our own. Strawberry Pie is one of my favorite things to make this time of year!
When I was working at The Yesterday Cafe back in 2013, I had a regular couple that would come in and sit in whatever section I was working. The wife was so kind and polite. Her husband came off a bit more gruff. Over time I got used to his personality and enjoyed when I would get to see them. After every meal, I would ask if they’d like some buttermilk pie. His response would always be that he wanted strawberry pie (clearly not offered on the menu). After months of him asking for one and him telling me how strawberry pie is the best pie on the planet, I looked up a recipe and surprised him with a slice after his meal. His smile was worth all of the gruff exterior! From that day on, he smiled every time he sat at one of my tables. It also turns out that strawberry pie is Trent’s favorite as well, so now I make them anytime I have a good supply of strawberries! I love when food brings joy and joyful memories! Below I have included the recipe for strawberry pie as well as the easiest homemade pie crust! Enjoy!

Farm Fresh Strawberry Pie
Farm Fresh Strawberry Pie
All homemade; Easy no chill, no rollout pie crust and no JELLO!
Ingredients
- 1 No Chill, No Rollout Pie Crust; baked and cooled in advance
- About 3lbs or two full quart containers of fresh strawberries, gently rinsed, dried
- 3/4 cup granulated sugar
- 2 Tablespoons cornstarch
- 1 1/2 teaspoons powdered Gelatin
Instructions
- Start by separating out 8oz of the less desirable looking or underripe strawberries and crush or puree them. For the rest of the strawberries, cut any of the very large berries in half then place them in the pre-baked pie crust with the cut sides facing down.
- In a medium saucepan add the strawberry puree, sugar, cornstarch, and gelatin.
- Heat on medium high heat while stirring constantly. The mixture will start out cloudy.
- Allow the mixture to gently boil until it turns a shiny dark red, then remove from the heat.
- Pour the mixture evenly over the strawberries in the prepared pie crust.
- Allow the pie to chill for at least 3 hours.
- Enjoy plain or with fresh whipped cream on top!

No Chill, No Rollout Pie Crust
Quick and easy pie crust that can be made directly in the pie plate for any type of pie!
Ingredients
- 1 2/3 cups All Purpose Flour
- 3 Tablespoons Sugar
- 1/2 teaspoon Salt
- 1/2 cup (one stick) melted salted butter (or other tasteless oil)
- 3 tablespoons whole milk
Instructions
- In your ungreased, deep dish pie plate, combine the flour, sugar, and salt together with a fork.
- Pour in your melted butter and milk. Mix until the dough is smooth. You will likely need to use your hands at the end to really get the crust mixed well. Ensure there are no dry ingredients left in the pan.
- Begin to gently and evenly press your dough into the bottom and all the way up the sides of pie plate.
- If your pie recipe calls for a pre-baked pie crust follow the directions below. If your recipe requires your pie crust to be baked at the same time as the filling, follow the pie's baking directions.
- To pre-bake:
- Preheat your oven to 350°
- Use a fork to poke a few holes in the bottom of your pie crust.
- Bake for 20-25 minutes or until light golden brown around the edges.
